We do this annually. I think it started in CO. So when we moved to UT, we had a salsa shortage and in our home that is not a good thing. So last year, I made quarts...that's right quarts and we used them sparingly. We had 9 left, so I really didn't know why I needed to make more. Needless to say, I was talked into making salsa again, because you know, "year supply" and "we'll go through it now that we have a supply"...
I ended up making around 22 quarts, a few pints and a huge container (as seen in the picture).
Thank heavens, I have a stove and the cooking materials to do this..thanks Grampy!

I was given a "vacation" by my family...no mom duties for 24 hours! It was fun!
I guess....It's all worth it in the end.

Let's see, that stove has to be worth quite a bit per hour and that salsa does look really good. Sure wouldn't want any to go to waste - bad enough for it to go to waist!!! A Sister down here has a big cast iron pot - I mean a big one - are you interested? There is no lid but it would take two to lift it.
And I just had another 24 quarts of honey dropped off at the office from Wisconsin - really good. To bad you are so far away - besides - you probably wouldn't like it.

Probably pass on that iron pot...but the honey...you can bring it when you come for a visit. Sounds yummy!
